Colorless to slightly yellow liquid, with a beef-like aroma and a nut and cocoa-like aroma. When diluted to 300 mg/kg, it has a chocolate aroma. Boiling point 137°C. Melting point -29°C, flash point 50°C. Miscible in water, ethanol, and most non-volatile oils.
