Menthol, also known as menthol or menthol ice, is a cyclic terpene alcohol flavor and fragrance. It appears as colorless needle-like or prismatic crystals or white crystalline powder. It has a special minty aroma. The taste is initially hot and then cool. The ethanol solution shows a neutral reaction. It is highly soluble in ethanol, liquid paraffin or volatile oil, and slightly soluble in water.
The common types include natural menthol and synthetic menthol.
Natural menthol is a saturated cyclic alcohol obtained by freezing, crystallizing, separating and refining peppermint oil, with a left-handed optical rotation. Synthetic menthol is made from lemon eucalyptus oil as the raw material. Its main component, citronellal, is closed-closed to form isopyclomenthol and then hydrogenated to obtain it, or thymol is synthesized from M-cresol and then catalytically hydrogenated to obtain a mixture of four menthol isomers. Through precise vacuum fractionation, refined synthetic menthol can be obtained, which is a non-optical racemate. It has bactericidal and preservative effects and can be used as a flavoring agent in toothpaste, perfume, beverages and candies.
